Just yesterday I was at the restaurant thinking about some food changes and felt that I didn’t have enough offal on the menu so I got some great lamb bits from the folks at prather ranch and went to town.
How simple can it be a plate of grilled lamb offal with salsa picante. A piece of grilled lamb liver, heart and kidney seasoned with salt and fresh ground pepper a splash of olive oil and right to the grill all cooked medium rare. Then dressed with salsa picante and out to the customer. This dish has been a hit. Take a look at the photo but don’t drool on your key board.
