And its innards, of the paper, are perfectly served as well. A recommendation to read something about the history of our contemporary avoidance of 'unpleasant' views, I recommend to read Norbert Elias "The Civilizing Process" in which he gives a vivid picture (and some theories) of the modern world turning away from all things natural. Not bad either is Ann Vileisis in her 'Kitchen Literacy.' Island Press. Thanks Chris for sharing this paper. They are so bland now. I'm glad my childhood was spent during the golden era of the real nugget. Today's children will sadly never know that satisfying rich umami flavor of chicken offal.
